185 ml Brookside milk, 25 g Brookside butter, 3 eggs, 25 g castor sugar, 25 g flour.


Boil the milk then combine and whisk with flour, butter & sugar. Boil again, then add the egg yolks one at a time while whisking continuously. Carefully fold into the mixture & put in a roasting tin half full of water. Boil then place in a pre-heated oven for 12-15 mins. Turn into a bowl & serve with hot sauce or as is.
